Cherry-Chicken Salad

Combine mayonnaise, juice, soy sauce and ginger and mix well. Combine cherries, chicken or turkey, cheese, celery and onion and toss. Let stand 10 minutes. Spoon cherry mixture onto bread and top with the yogurt/mayonnaise mixture.
Variations:
For a lighter version of the recipe, use whole leaves of green or red lettuce instead of the bread.

- 1/2 cup yogurt or mayonnaise or a combination
- 1 TBSP orange Juice
- 1 tsp Soy Sauce
- 1/4 tsp ground ginger
- 2 cups pitted fresh cherries, halved
- 2 cups cubed, cooked chicken or turkey
- 1 cup cubed, medium-sharp cheddar cheese
- 1/2 cup diagonally-sliced celery
- 1/3 cup sliced green onion with tops
