Cabbage Sauté

Adapted from Students for Sustainable Agriculture Seasonal Cookbook

Serves: 4
Time to prepare: 35 minutes

  • 1 medium Cabbage, quartered
  • 2 TBSP Extra Virgin Olive Oil
  • 1 TBSP Butter
  • 2 cloves Garlic, chopped
  • Salt and Pepper to taste

Shred cabbage. Heat olive oil and butter in medium saucepan. Add garlic and cook 30 seconds. Add cabbage one quarter at a time until all is in the pan, stirring after each addition to coat with oil. Cover and cook, stirring occasionally, until cabbage is wilted and completely soft (about 30 minutes).

Variation:
This recipe can be modified to work well with any leafy green vegetable (Chard, Spinach, etc.): sauté a little onion and garlic, add chopped greens, cook until soft (time will vary), and serve as a nutrient-rich side dish.
